Double J Cherries "SURPRISE"

Bing crerries were on sale at my local grocery store and I wanted to try a brew with them.

Type: Extract w/grain Size: 5 gallons
Color:
12 HCU (~8 SRM)
Bitterness: 32 IBU
OG: 1.079 FG: 1.008
Alcohol: 9.2% v/v (7.2% w/w)
Water: Spring water
Grain: 8 oz. American crystal 40L
8 oz. Dextrine malt (Cara-Pils)
Steep: Put grain bags in 5 gallons cold water, brought temp. up to 150°f for 30 munutes. Rinsed bags with 1 gallon water.
Boil: 60 minutes SG 1.066 6 gallons
5 lb. Light dry malt extract
1 lb. Honey
3 lb. Wheat extract
Hops: 2 oz. Hallertauer (4.25% AA, 60 min.)
1 oz. Tettnanger (4.5% AA, 15 min.)
Yeast: Wyeast 1056 (American Ale)
Log: Primary fermentation for 1 week in 6.5 gal. glass carboy.
Brought 11 lbs of cherries up to 150°f., hold for 20 minutes, in just enough water to cover them, to kill wild yeasts. Put cherries in bottom of 6.5 gal. bucket. Racked beer to secondary(plastic bucket) According to calculations cherries will add 22 points to gravity. Fermentation will start again. Leave in secondary for 2 weeks then rack again and allow to settle and clear.
Carbonation: Batch prime with 1 1/4 cup light DME and bottle.
