Duncan's Basic Beer
This is my first creation (not my first batch, but the first one I designed.) I used Nottingham Ale Yeast (dry), and it came out full smooth and balanced. Maybe the Mt. Hood/Fuggles mix is odd, but it really worked out well. My wife wanted to call it "Little Bunny Fru Fru Beer" 'cause it was so hoppy! Its a little like what Molsen Ale could be if they made it right.

Water: | Sanitized equipment, rinsed well. I boil all water as it lowers the chlorine content...gotta love that city water...
Grain: | 12 oz. American crystal 20L
Steep: | Added crystal malt to cold water, heated slowly. removed just prior to boil.
Boil: | 60 minutes | SG 1.108 | 2.5 gallons
7 lb. Light malt extract
Just malt hops and yeast...
Hops: | 1.5 oz. Mt. Hood (4.5% AA, 60 min.) .5 oz. Fuggles (4.75% AA, 15 min.) .5 oz. Mt. Hood (4.5% AA, 15 min.) .5 oz. Fuggles (aroma) .5 oz. Mt. Hood (aroma) |

Yeast: | No starter. The Nottingham yeast got a little sleepy after the third day, but a single swirl perked it up.
Log: | Brewed Early January. Fermmentation was done in 7 days, but my proffessional work kept the beer in the primary aniother week. Botlled, but then a cold snap put my store room below 60- degrees and the yeast went bak to sleep. Roused successfuly after four days at 70Deg F. Tasty... I primed w/ 1.25 cups Dark DME (hey, it was there and I dont Like corn sugar)
Carbonation: | Fairly low.
Tasting: | Smooth, long finish. VERY evident Hop aroma, if I hadnt added the crysatl malt it would have been to much. As it was, the beer gods smiled on this fool. |
