DJ Pale Rider
This recipe provides the most basic and drinkable Pale Ale/Best Bitter
that I have made to date. Even the my uninterested friends of Mega Brews give
this beer a second and third sip.

Hops: | 3.50 oz. Northern Brewer (6.9% AA, 60 min.) 0.50 oz. Northern Brewer (6.9% AA, 30 min.) 1 oz. Kent Goldings (aroma) |

Yeast: | Wyeast #1968 from a 3 liter starter. | |||||||
Log: | Wyeast #1968 from a 3 liter starter that was divided into two six gallon carboys. Full activity in 12 hours. High flocculation and rapid ferment for 72 hours and krausen has dropped out and activity is subsiding.Brew date was 3/20/98. Fermented at 66 degrees. Racked to secondary on 3/26/98 and dry hopped with 1.5 oz. of East Kent Goldings for 7 days and kegged on 4/2/98 to force carbonate and condition at 34 degrees for 3 weeks. Flush all carboys and kegs with C02 and when racking from a carboy always displace the beer with c02 during racking. |
