Bitterness: 32 IBU
OG: 1.060 FG: 1.015
Alcohol: 5.8% v/v (4.5% w/w)
Water: All water is RO
Grain: 24 lb. American 2-row
1.75 lb. American crystal 60L
1.75 lb. American crystal 90L
6 oz. British chocolate
2.5 oz. British black patent
2 lb. Gambrinus Honey malt
Mash: 70% efficiency
Mashed in at 160° F to rest at 155° F for 1 hour. Checked sacrification w/ Iodine & sparged w/ 175° F hot liquor to mash out.


Boil: 60 minutes SG 1.055 13 gallons
1 Tablespoon of Irish Moss & 1 Tablespoon bee pollin at 15 min. left in mash.
Hops: 3 oz. Kent Goldings (5.3% AA, 60 min.)
2 oz. Fuggles (4% AA, 15 min.)
1 oz. Fuggles (4% AA, 5 min.)
1 oz. Kent Goldings (5.3% AA, 5 min.)
Yeast: Oak Creek Brewing house yeast slurry. Active fermentation in 4 hours
Carbonation: Will keg & force carbonate.
