New Sailfish Ale

This is a 5 gallon batch I have brwed a couple of times. Fairly simple. It has turned out really nice, especially since I started using the converted Igloo coolers ith Torpedo strainers for mashing.

Brewer: Matt Ronn Email: mronn@triad.rr.com
Beer: New Sailfish Ale Style: American Amber Ale
Type: All grain Size: 4 gallons
Color:
5 HCU (~5 SRM)
Bitterness: 97 IBU
OG: 1.060 FG: 1.012
Alcohol: 6.2% v/v (4.9% w/w)
Water: PUR faucet-mount water filter
Grain: 7.22 lb. American 2-row
2.17 lb. American Vienna
Mash: 70% efficiency
I use 2 Igloo 5 gallon water coolers converted to mash tuns with the Torpedo strainer and valves. Water is mashed at as close to 155 deg as I can keep it. Mash is sparged with 175 deg water. I do not recirculate or add wort to the mash--once through the mash the wort goes into the boiling pot.
Boil: 60 minutes SG 1.048 5 gallons
Irish moss-1 teaspoon at 45 minutes into the boil.
Hops: 1.69 oz. Centennial (10.5% AA, 60 min.)
0.85 oz. Centennial (10.5% AA, 15 min.)
1 oz. Centennial (aroma)
Yeast: Yeast is Safale SO5. I make a starter from regular DME and start the yeast 2 - 3 days prior to boil/pitch. I use a 1 quart glass jar equipped with stopper and air lock.
Carbonation: This is bottle conditioned ale--I use 1.25 cups of regular DME mixed in a priming tank imediately before bottling. Beer is bottled in 12 or 16 oz. brown bottles and capped.
