Guiness Clone I
Brfore the boil, save 2 qts. of wort and 1 cup of spent grain. Mix wort and grain in a gallon jug, let sit 24 hours until a lactic fermentation develops. After fermentation has begun in gallon container, add 1 cup of fermenting wort to container. When primary fermentation is complete for both portions, boil sour beer, cool and add to 5 gallon secondary fermentation vessel for secondary fermentation.

Add 9 qts. 130° water to mash and hold at 124° for 30 minutes. Add 3 qts. boiling water, stir to bring mash to 150° for 1 hour; add heat if necessary. Sparge with 4 gallons of 170° water. | ||||||||
