Water: Tap water with 2 Tbsp 5.2 Mash Stabilizer, 3 Tbsp gypsum

2 lb. American victory
2 lb. Belgian biscuit
3 lb. American crystal 20L
Mash: 85% efficiency
RIMS Strike 150deg, increase and hold 155deg for 60 min, increase and mash out at 165deg for 10 min, Sparge at 170deg.
Boil: 100 minutes SG 1.101 12 gallons
4 lb. Mango
Hops: 2 oz. Citra (10% AA, 60 min.)
4 oz. Pacific Jade (12% AA, 60 min.)
3 oz. Citra (10% AA, 30 min.)
3 oz. Citra (10% AA, 15 min.)
1 oz. Citra (aroma)
1 oz. Pacific Jade (aroma)
Yeast: California Ale
Alternate Wyeast 1056 American Ale
Log: Primary ferment 5-7 days
Add mango on day 5
Rack to secondary and dry hop with 1oz Citra and 1oz Jade for 7 days.
