Gender Bender - Raspberry Wheat Wine

In light of current socio-political events, I've decided to brew a "Gender Confused" beer that has the balls of a man but identifies as a woman. Bold and strong, this wheat whine can kick your ass but is fruity and foofy enough to pee in the ladies room at Target. Oak aged for that hint of maturity, yet bold in its angry bitterness. Don't dare try and judge, as it falls into a category all its own.

Type: All grain Size: 5.5 gallons
Color:
14 HCU (~9 SRM)
Bitterness: 53 IBU
OG: 1.104 FG: 1.022
Alcohol: 10.6% v/v (8.3% w/w)
Grain: 6 lb. American 2-row
1 lb. American crystal 40L
13 lb. Raw wheat
1 lb. Rice Hulls
Mash: 70% efficiency
Single infusion at 149°F. Decoction mash out to 160°F for 10 minutes. Continuous sparge with 170°F water to collect 7.5 gallons in brewpot.
Boil: 70 minutes SG 1.076 7.5 gallons
2 lb. Honey
Roll 10 minutes before hops additions and remove any hot break. Add honey last couple minutes of boil.
Hops: 1.5 oz. Columbus (12% AA, 60 min.)
.5 oz. Cascade (6% AA, 15 min.)
.5 oz. Cascade (aroma)
Yeast: WLP001/WY1056/US-05 in a huge starter or cake from a prior batch.
Log: Ferment at 65° to 70° F. When krauesen drops back, check SG. Rack into secondary when gravity hits 1.022 and add 4 pounds pulverized frozen red raspberries. Allow 7 days on fruit then rack to a tertiary fermenter with 2 oz oak chips. Age at cellar temperatures (or lower) for 7 to 14 days. Keg and force carbonate. Condition as long as desired (30 to 60 days minimum).
Carbonation: Keg and force carbonate.
