3.5 lb. British Carastan
Mash: 75% efficiency
Single step RIM @154°f
Boil: 75 minutes SG 1.054 20 gallons
Irish moss, last 10 mins.
Hops: 160g Fuggles (4.75% AA, 75 min.)
80g Kent Goldings (5% AA, 10 min.)
40g Kent Goldings (aroma)
Yeast: Wyeast London ale 1028, stepped up to 4 litres
Log: Aroma hops added to the hop back during cooling.
Primary ferment @ 20°f to 1.035
Carbonation: Keg conditioned with 2 cups of brown sugar at 20°f. cooled to 45°f
and aged 1 month.
