Factotum American IPA

This is an American version of the standard IPA. It meets all the style guidelines of a standard IPA, but uses California Brew Pub yeast and is a stepped up version of an American Pale Ale.

20 HCU (~12 SRM)
Bitterness: 60 IBU
OG: 1.065 FG: 1.016
Alcohol: 6.4% v/v (5.0% w/w)
Water: Phoenix Az water is fairly hard, so I just run the water from the tap and let it sit in the sun for a couple of hours to dissipate the chlorine.
Grain: 2 lb. American 2-row
3 oz. American victory
3 oz. Belgian aromatic
3 oz. Belgian biscuit
4 oz. American crystal 10L
3 oz. Belgian Special B
Steep: Add the grains and 1 oz of Cascade leaf hops in a grain bag to a 2 galloon cooler. Add water at 162° to the top of the cooler and put the lid on. Let steep for 40 minutes, occasionally stirring the bag. Leave the lid on as much as possible. Pour a cup or two of hot water over the bag when the steeping is finished.
Boil: 60 minutes SG 1.058 6.5 gallons
9 lb. Light malt extract
Partially covered boil, just stick the thermometer in there and let the lid hold it in. This keeps 90% or so of the kettle covered. This also requires a fairly slow boil to avoid boiling over. Irish Moss at 40 minutes onto the boil.
Hops: 1 oz. Centennial (10.5% AA, 60 min.)
1 oz. Centennial (10.5% AA, 30 min.)
1 oz. Cascade (6% AA, 15 min.)
1 oz. Cascade (aroma)
Yeast: BrewTek California Brew Pub yeast. Made a 10 ml starter and stepped up to 300 ml after 24 hours. Pitched 18 hours after stepping to 300 ml.
Log: 1 week in the primary at ~70°. Rack to secondary for one week.
Carbonation: Bottle with 1/2 cup corn sugar. Condition for at least 2 weeks, preferably 4 weeks.
