Rookie American Pale Ale

This is my first All-Grain brew.

Type: All grain Size: 5.5 gallons
Color:
11 HCU (~8 SRM)
Bitterness: 39 IBU
OG: 1.068 FG: 1.012
Alcohol: 7.2% v/v (5.7% w/w)
Water: 8 Gallons of Spring Water. Add 1 tablespoon of gypsum to the sparge and strike water. Adjust with 88% lactic acid by eyedropper.
Grain: 10 lb. American 2-row
2 lb. 0 oz. American crystal 20L
Mash: 85% efficiency
Mash grains 155° F 3 gallon of strike water. Perform iodine tests until no starch present. Sparge with 5 gallons of sparge water at 170° for a boil volume of 6.5 gallons.
Boil: 90 minutes SG 1.058 6.5 gallons
Add 1 teaspoon of yeastex at beginning of boil.
Add 1 tablespoon of irish moss at 30'.
Hops: .5 oz. Perle (6.8% AA, 90 min.)
.5 oz. Perle (6.8% AA, 60 min.)
.5 oz. Centennial (9.1% AA, 30 min.)
.5 oz. Cascade (6% AA, 15 min.)
.5 oz. Cascade (aroma)
Yeast: Wyeast American #1272, Made starter night before.
Log: Ferment at 65° for 1 week in primary. Rack to secondary for 5 more weeks. Bottle at fg 1.012.
Carbonation: 1 qt of gyle from wort to kreusen. Boiled to sanitize.
Tasting: brew date 1/28/2001
