Traditional Budvar Pilsner using Undermodified Budvar Malt, Whole Saaz hops & Budvar yeast.

Alcohol: 6.1% v/v (4.8% w/w)
Water: All RO Water, no treatment.
Grain: 28 lb. Czech Budvar Pilsner (undermodified)
1 lb. Belgian Munich
1 lb. American crystal 20L
Mash: 75% efficiency
Triple decoction w/ rests @ 125F,148F, & 168F mash out.
Boil: 90 minutes SG 1.057 15 gallons
1 tablespoon Irish Moss last 15 min.
Hops: 3 oz. Saaz (3.75% AA, 90 min.)
3 oz. Saaz (3.75% AA, 60 min.)
2 oz. Saaz (3.75% AA, 20 min.)
Yeast: Wheast Budvad 1000XL 1 gal starter.
Log: Primary 3 weeks @ 50F, Diacetyl rest 1 day, lager 60 days @ 35F.
Carbonation: 2.5 volumes Keg: 9.7 psi @ 35°F
