Type: Partial mash Size: 23 liters

28 HCU (~15 SRM)
Bitterness: 12 IBU
OG: 1.060 FG: 1.014
Alcohol: 5.9% v/v (4.6% w/w)
Water: mild carbonate water with 2 g gypsum in mash,
phosphoric acid to neutralize sparge water.
Grain: 10 lb. American 2-row
5 oz. Belgian aromatic
8 oz. American crystal 60L
3 oz. American chocolate
1 lb. Melanoidin
Mash: 74% efficiency
Strike 155°F, leave overnight.
Reduced sparge.
Boil: 60 minutes SG 1.081 17 liters
14 oz. Brown sugar
1/4 tsp Irish moss
Add cranberries at end of boil, hold 5 min. before chilling.
Hops: 1 oz. Cascade (5.4% AA, 45 min.)
!!!2 lb oz. cranberries (aroma)
Yeast: Wyeast Thames Valley Ale (re-pitch from secondary)
Log: Will make as soon as lager season is over.
Carbonation: Prime with 2/3 cup glucose
