The Black Stuff

As close to guinness As I've found. I go this from a FAQ (sorry, don't have the URL).

Brewer: The Sloth Email: -
Beer: The Black Stuff Style: Irish Dry Stout
Type: All grain Size: 5 gallons
Color:
123 HCU (~41 SRM)
Bitterness: 35 IBU
OG: 1.058 FG: 1.010
Alcohol: 6.2% v/v (4.9% w/w)
Water: Used Poland Springs
Grain: 6.47 lb. British pale
4.7 oz. British black patent
0.88 lb. Roasted barley
2.65 lb. Flaked barley
Mash: 80% efficiency
Recirculation mash for 90 minutes at 150°, sparged at 170° sending water through twice.
Boil: 60 minutes SG 1.065 4.5 gallons
Hops: 0.5 oz. Chinook (12% AA, 60 min.)
0.5 oz. Chinook (12% AA, 40 min.)
0.5 oz. Kent Goldings (5% AA, 20 min.)
Yeast: Used Wyeast #1084 Irish Ale, in half cup starter of sterilized wort made pulled before the boil.
Log: Primary for 7 days at 65° and then secondary for 14 at 70°. After bottling let sit at least tree weeks. I know its tough but a fuller flavor will develope.
Carbonation: 1.8 volumes Corn Sugar: 9.00 oz. for 17 gallons @ 70°F
Would advise bottler to tap bottles right before capping to evacuate air.
Tasting: Pretty much the real thing. Nice and dry and crisp. A lot of good body from all the flaked barley but it might have used a little more carbonation. This is not a beer for the feint of heart. It is closer to the Extra Stout that is bottled as opposed ot the draught version.
