DJ Bitter III

This Ale is similar to DJ II except the bittering hops are Fuggles instead of Northern Brewers.
This ale is very good when fresh and conditioned properly in the keg and served as a draught.
My ales improved dramatically when I started limiting my original gravities to
realistic style levels. More malt is not better...in my opinion.

1 lb. American crystal 20L
8 oz. Belgian CaraVienne
2 oz. Belgian chocolate
8 oz. Flaked barley
Mash: 85% efficiency
Mashed at 154 degrees for 75 minutes
Boil: 90 minutes SG 1.037 14 gallons
Irish Moss at 20 minutes
Hops: 4 oz. Fuggles (4.75% AA, 60 min.)
1 oz. Fuggles (4.75% AA, 30 min.)
1 oz. Kent Goldings (5% AA, 30 min.)
1 oz. Kent Goldings (5% AA, 15 min.)
Yeast: Wyeast London ALe
Log: Primary 7 days
Secondary with .5 oz.East Kent Goldings dry hop for 6 days.
