3 oz. British chocolate
1.5 oz. British black patent
12 lb. British pale
Mash: 56% efficiency
Mash with 15.6 qts. of water at 158 for 60 min.
Boil: 90 minutes SG 1.050 6.5 gallons
1 lb. 8 oz. Honey
1 tsp. Irish Moss last 15 min of boil.
Hops: .5 oz. Target (11.8% AA, 60 min.)
1 oz. Kent Goldings (4.5% AA, 15 min.)
Yeast: Wyeast 1098 British Ale
Log: Ferment at 68 for 1 week. Transfer to secondary and ferment 5 days at 68 then 2 days at 33.
