2001 Halloween Pumpkin Ale

Beer: 2001 Halloween Pumpkin Ale Style: Herb/Spice Beer
Type: Extract w/grain Size: 5.25 gallons
Color:
31 HCU (~16 SRM)
Bitterness: 27 IBU
OG: 1.049 FG: 1.015
Alcohol: 4.4% v/v (3.5% w/w)
Water: Tap water
Grain: 1 lb. British crystal 95-115L
Steep: Steep grains as water approaches boil.
Boil: 60 minutes SG 1.043 6 gallons
6.75 lb. Light malt extract
8lbs. lightly roasted "Cinderella" pumpkin
Spices (to be added while wort is cooling):
1.5 tsp whole allspice
2 tsp ground cinnamon
1 oz. ground ginger
1.5 tsp nutmeg
1/2 tsp whole cloves (broken up)
Hops: 1.5 oz. Fuggles (4.75% AA, 60 min.)
.5 oz. Fuggles (aroma)
Yeast: White Labs "English Ale"
Log: Primary ferment at 68 degrees F for one week, then to secondary for another two weeks.
Carbonation: Force carbonate with 2.0 volumes of CO2
Tasting: Flavor mellowed after five weeks and was consumed during Halloween party in week six. Spice is intentially light and for the un-accustomed.
