1 tbsp irish moss last 15 minutes. | ||||||||
Hops: | 4 oz. Kent Goldings (5% AA, 90 min.) | |||||||
Yeast: | Champagne Yeast. 3 pkgs. Started in 1/2 gallon starter made week in advance. | |||||||
Log: | Primary 7 days Secondary 1 month (purge carboy with CO2 and make sure that air stopper in filled with water) Bottle for 1 year or more before sampling. Will last indefinitly if kept cool and packaged w/o O2. Peak I imagine is three years. |

It will take a long time to carbonate ~ 3months. |
