Bad Ass Bock
This is one kick-ass bock. I've fine tuned this recipe based
on one handed down to me by my grandfather.

Water: | Spring water is best, however use tap if it's any good. If you use tap, boil it first to remove any residual chlorine. Cool boiled tap water in fridge before using. |

Grain: | 2 lb. American crystal 40L 8 oz. Belgian CaraMunich 8 oz. Belgian CaraVienne |

Steep: | Place grains in disposable bag and put in COLD water. Bring to 155*F and hold for 30 mins. Remove grain bag, squeeze out as much water as possible. Bring wort to boil. |

Boil: | 60 minutes | SG 1.182 | 2.5 gallons | |||||
7 lb. Dark malt extract 1 lb. Brown sugar 2 lb. Honey 12 oz. Molasses |

Boil for at least 60 minutes. Use a wort chiller, or lacking that, use an ice bath to chill the wort down to pitching temp. {~70*F}. Boil volume is 2.5 gallons, for those of you who don't have a big brew pot. Add cool spring water,or cooled boiled tap water to primary to equal 6 gallons total volume. |

Hops: | 1.72 oz. Northern Brewer (8.5% AA, 60 min.) 1.72 oz. Northern Brewer (8.5% AA, 30 min.) |

Yeast: | I use a White Labs Trappist Ale Yeast. I find it works best for this beer,even though it's not a traditional yeast for the style. Pitch yeast into wort when it has cooled to 70-75*F. |

Log: | Ferment in primary at 70*F for 7 to 10 days. Rack to glass carboy for 14 days. Bottle and age for 30 days or more. The flavor develops better after ageing. |

Carbonation: | 2.7 volumes | Corn Sugar: 5.51 oz. for 5.5 gallons @ 70°F | ||||||
Tasting: | A well balanced bock, with a hint of sweetness from the honey. No "cidery" taste, if you let it age first. Just try to keep your hands off it while it ages. Good luck ! |
