I Wish I Were In Katahdin Ale

I started off trying to replicate Katahdin Red Ale and went off the path slightly and came up with this.

42 HCU (~19 SRM)
Bitterness: 40 IBU
OG: 1.074 FG: 1.014
Alcohol: 7.7% v/v (6.1% w/w)
Grain: 1 lb. 8 oz. American 2-row
1 lb. 8 oz. German Munich
1 lb. 8 oz. Belgian CaraMunich
6.0 oz. Belgian Special B
6.0 oz. British chocolate
Steep: Water to 160° and steep for 30-40 minutes agitating (dunking) occasionally.
Boil: 60 minutes SG 1.069 16 gallons
19.0 lb. Light malt extract
9 lb. Amber malt extract
Irish moss in the last 20 minutes of the boil
Hops: 1 oz. Cascade (6% AA, 60 min.)
1 oz. Cluster (7% AA, 60 min.)
1 oz. Northern Brewer (8.5% AA, 60 min.)
1 oz. Cascade (6% AA, 30 min.)
1 oz. Cluster (7% AA, 30 min.)
1 oz. Northern Brewer (8.5% AA, 30 min.)
1.50 oz. Cluster (aroma)
Yeast: Ale Yeast
Carbonation: 1.9 volumes Honey: 4.01 oz. for 15 gallons @ 40°F
Save 1 pint of wort in a sterilized jar and refrigerate. Used to prime for bottle conditioning. (Ignore what it says up there...)
