This is an all-grain kit from Beer, Beer, More Beer. The grain bill is big to make up for ineffecient sparges, I guess.

Mashed at 152-155 for 60 minutes. Sparged slowly for 45 minutes. The sparge went smoothly. | ||||||||
Boil: | 60 minutes | SG 1.055 | 6.5 gallons | |||||
Irish Moss added at 40 minutes into the boil. 1 oz of Corriander and 1 oz. bitter organge peel added for last 5 minutes of the boil. |

Hops: | 1 oz. Hallertauer (6.8% AA, 60 min.) 1 oz. Saaz (3.9% AA, 10 min.) |

Yeast: | White Labs Wit Yeast starter 1 quart. | |||||||
Log: | Cooled wort to 75, pitched yeast. Dropped strainer into wort. Shouted out loud. Fished it out. Fermentation started within 3 hours. Fermented at around 70. |
