Harvest Red

My "Harvest Red" Ale has been the most popular of all of my homebrews. All beer drinkers seem to like this one! Definitely a house favorite!!

24 HCU (~13 SRM)
Bitterness: 38 IBU
OG: 1.070 FG: 1.040
Alcohol: 3.9% v/v (3.1% w/w)
Water: N/A
Grain: 10 lb. American 2-row
.5 lb. Wheat malt
1 lb. American crystal 40L
.5 lb. American crystal 120L
Mash: 80% efficiency
Bring mash water to 156° (accounts for 2° decrease after adding grains).
Mash-in the following grains...
- 10 lbs. American 2-row
- 1 lb. American Crystal 40L
- .5 lb. American Crystal 120L
- .5 lb. American Wheat

Starch Conversion - 60 minutes at 154°

Mash-out - 10 minutes at 168°

Sparge Water - 178°

Sparged for 35 minutes.
Boil: 90 minutes SG 1.047 7.5 gallons
Add 1 oz. Northern Brewer (7.7%) at 40.
Add 1 oz. Hallertau Hersbrucker (4.4%) at 25.
Add 1 tablet Whirlfloc (condensed Irish Moss) at 15.
Hops: 1 oz. Hallertauer Hersbrucker (5% AA, 40 min.)
1 oz. Northern Brewer (8.5% AA, 25 min.)
Yeast: Wyeast 1056 - American Ale Yeast pitched at 74°.
Log: Approximate SRM - 13.2
Primary Fermentation held at 72° for 8 days.
Secondary Fermentation held at 72° for 5 days.
Chilled to 36° for 2 days.
Carbonation: Force Carbonated at 12 PSI at 36°.
Tasting: This is a great beer! I'm definitely not a professional beer taster, but I would describe this one as having the following characteristics...
- Good balance of malt/hops
- No resonating after-taste
- Great Color!!
