Bitterness: 28 IBU
OG: 1.072 FG: 1.010
Alcohol: 7.9% v/v (6.2% w/w)
Water: Acidified sparge water to reach 5.8 pH
Grain: 10 lb. British pale
1 lb. British crystal 50-60L
4 oz. British chocolate
4 oz. Roasted barley
Mash: 75% efficiency
Single infusion mash at 155F for 60 minutes
Boil: 75 minutes SG 1.051 7 gallons
1 lb. Molasses
Hops: 1.5 oz. Fuggles (4.75% AA, 60 min.)
.5 oz. Fuggles (4.75% AA, 15 min.)
Yeast: White Labs Brit Ale Yeast
Log: 11/16/02 - brewed. Sparge stuck. Yeast started within 18 hours, but plodded along for the most part.
12/1/02 - racked over in to secondary. Roasty, overly hoppy (as expected). Will allow to settle for a couple of weeks before bottling. Plan to use Brown Sugar as priming sugar.
