Single step infusion mash 152° for 60 or until iodine test shows conversion complete. Batch sparge to get 3-3.5 gallons. Top off to get full boil volume of 6.5 gal. | ||||||||
Boil: | 60 minutes | SG 1.045 | 6.5 gallons | |||||
5 lb. Light malt extract | ||||||||
Bring to boil. Remove from heat and add malt extract and return to heat and return to boil. Start hop schedule. Add teaspoon irish moss with 15 min. to go. | ||||||||
Hops: | .5 oz. Galena (13% AA, 60 min.) 1 oz. Fuggles (4.75% AA, 30 min.) 1 oz. Kent Goldings (aroma) |

Yeast: | WLP005 British Ale bumped up to a 1 pint starter. Pitch at 70°. |

Log: | Primary ferment for 12 days at 68° (be aware that WLP005 doesn't like to get cold.) Secondary ferment for 7 days (add EK Goldings at racking for dry hopping) |

Tasting: | Nice hop aroma from the Goldings. Good plumy flavor due to the Special B. WLP005 has become one of my favorite yeast strains, pretty clean fermentation for a Brit. yeast strain. May try this one as an all-grainer next time. |
