ChimHey!!!
This is my first go at a Belgian Ale. It was intended to be a clone of the Trappist Chimay Red, but I think it is more along the lines of the Chimay Blue. I taste tested mine against a bottle of red, and found the red to be much more "yeasty" than my version. Mine was less "yeasty" and had a more chocolate full flavor. Actually I liked mine much more, as the subtle "yeasty" Belgian trademark is much more compatible for my palate. Anyway, I am very pleased with the results, and will definitely make this again for next Christmas!

Tasting: | This beer is a brown belgian style beer with a very nice mellow chocolate flavor. It has a full mouthfeel of chocolate but finishes nicely with a Belgian aftertaste from the yeast. It is NOT as "yeasty" as the real Chimays, but I like it better, and it is potent! |
