Holy Stout

Yummy!!! I always whip this brew up using a no-sparge mash. That's why I need to add a little dme to hit target gravity. But hey, as far as I'm concerned, its full grain!

Type: All grain Size: 5.5 gallons
Color:
109 HCU (~37 SRM)
Bitterness: 32 IBU
OG: 1.044 FG: 1.010
Alcohol: 4.4% v/v (3.5% w/w)
Water: 1 tsp gypsum
Grain: 5 lb. British pale
.5 lb. British crystal 135-165L
1 lb. Roasted barley
.5 lb. Flaked barley
Mash: 70% efficiency
Use 1.25 quarts of 77 C strike water per pound of grist (8.75 qts). Maintain 67-68 C for 1 hour. Add another 0.75 qts of 77 C water per pound (5.25 qt), mix for 10 minutes, and drain away through lauter-tun into the kettle. Recirculate the first gallon. No sparge, just boil. If mash efficiency is lower than 70%, just add more dme.
Boil: 60 minutes SG 1.088 2.75 gallons
1.5 lb. Light dry malt extract
1/2 tsp irish moss during last 10 minutes.
Hops: 3 oz. Fuggles (4.75% AA, 60 min.)
Yeast: Wyeast British II ale
