Blackberry Braggot

Good Braggot, clean clear strong. Serve chilled in stemmed glasses. This recipie I used M&F extra lite ME and raw local Blackberry Honey. I have used Fireweed, Rasberry and Clover honey in the past.

Type: All grain Size: 5 gallons
Color:
6 HCU (~5 SRM)
Bitterness: 13 IBU
OG: 1.071 FG: 1.007
Alcohol: 8.2% v/v (6.4% w/w)
Water: PDX city water
Boil: minutes SG 1.088 4 gallons
5 lb. Light malt extract
4 lb. Honey
Boil hops w/extract for 60 minutes (I have also used 1oz german saaz) then
Hops: .65 oz. Fuggles (4.75% AA, 60 min.)
.5 oz. Mt. Hood (4.5% AA, 60 min.)
Yeast: Nottingham ale yeast. Fermented cooler (62-4F) for cleaner taste
Log: Primary 1 month, secondary 3 mos
Carbonation: 1 1/2 cups DME at bottling time
Tasting: clean crisp dry finnish
