2 tsp Calcium Carbonate (chalk)
Grain: 18 lb. British pale
1 lb. German Light Munich
1 lb. German Dark Munich
1.5 lb. American crystal 120L
.5 lb. Dextrine malt (Cara-Pils)
3 oz. American chocolate
8 oz. American black patent
8 oz. Roasted barley
Mash: 70% efficiency
148 for 12 min, then ramp up to
150 for 40 min, then ramp up to
165 (took anotehr 40 min)
sparge = 12 gallons in 45 min
Boil: 90 minutes SG 1.040 15 gallons
2 tsp Irish Moss
1 tsp White Labs Yeast Nutrient
Hops: 1 oz. Whitbread Golding Variety (4.5% AA, 90 min.)
1 oz. Whitbread Golding Variety (4.5% AA, 45 min.)
2 oz. Kent Goldings (5.6% AA, 30 min.)
1 oz. Whitbread Golding Variety (4.5% AA, 15 min.)
Yeast: split into (2) 6 gallon batches
