An excellent spiced dark ale, nice cinnamon aroma without one flavor overpowering the others.

Steep: | Put crushed grains in a grain bag and put in 3 gallons of cold water. Bring water towards a boil, take out grains at 170 F. | |||||||
Boil: | 60 minutes | SG 1.066 | 4.5 gallons | |||||
3 lb. Light malt extract 3 lb. Amber dry malt extract 8 oz. Brown sugar |

Add malts and brown sugar and bring to a boil. Add N Brewer hops and boil 60min. Add 2 sticks of cinnamon, 1/2 oz dried orange peel, and 1 tsp crushed cardamom at 30 min into boil. Add 1 tsp Irish Moss w/ 15 min left. Add Cascade hops w/ 8 min left. | ||||||||

Yeast: | Pitched rehydrated Australian Ale yeast (14g packet). It didn't take off after 2 days, so I pitched 1 pkt Danstar Windsor Ale and 1 pkt Superior Lager yeast (both rehydrated) and it began fermenting within 24 hrs. | |||||||

Tasting: | Excellent flavor after 2 weeks in bottle, dark color but light body. I think I would add more cardamom next time, but everything blended well. |
