trailer park pale ale

This is a American Pale Ale that I will pitch an American Ale yeast onto and then step the cake up 2 more times, so I am making this to style.

Type: All grain Size: 6 Imp. gal.
Color:
7 HCU (~6 SRM)
Bitterness: 35 IBU
OG: 1.047 FG: 1.010
Alcohol: 4.7% v/v (3.7% w/w)
Water: I use a little gypsum normally but may not as I will brew this with VERY hard Saratoga mineral water.
Grain: 7 lb. American 2-row
3 lb. British lager
1 lb. Wheat malt
.5 lb. American crystal 60L
1 lb. Flaked corn
Mash: 72% efficiency
hold at 122 for an hour(longer than necessary but I love the clarity)
raise to 153 then mash out at 160.
Boil: 90 minutes SG 1.033 8.5 Imp. gal.
I will always use Irish Moss with 15 minutes left to boil.
Hops: 1 oz. Chinook (12% AA, 45 min.)
.5 oz. Cluster (7% AA, 15 min.)
1 oz. Cascade (aroma)
Yeast: I will use Wyeast American Ale II because it finishes a bit drier than I. I'll pitch from a 1/2 gallon starter made 2 days prior.
Log: I will try to ferment in the mid to upper 60's to reduce fruity tones.
Carbonation: normal 3/4 cups bottling sugar
