60-Minute Wet IPA

Brewed this batch on the low end of an IPA on purpose. If the homegrown hops are weaker than projected, it can still be a Pale Ale. Conversely, if they are stronger, it will still work as an IPA.

Bitterness: 41 IBU
OG: 1.051 FG: 1.012
Alcohol: 5.1% v/v (4.0% w/w)
Water: 2 tsp. Gypsum
.25 tsp. Non-iodized salt
1 tsp. Epson Salts
1.5 tsp CaCl
Grain: 1 lb. British pale
.5 lb. American crystal 60L
.5 lb. Dextrine malt (Cara-Pils)
Mash: 52% efficiency
122 for 15 min
148 for 20 min
152 for 20 min
Raise to 165 for 10 mon
Boil: 60 minutes SG 1.128 2 gallons
3.5 lb. Light malt extract
2 lb. Extra Light dry malt extract
Add homegrown wet hops (right off the vine) constantly for 60 min
Hops: .5 oz. Chinook (10.7% AA, 60 min.)
.5 oz. Willamette (3% AA, 60 min.)
.5 oz. Chinook (10.7% AA, 45 min.)
.5 oz. Centennial (9% AA, 45 min.)
.5 oz. Willamette (3% AA, 45 min.)
.5 oz. Centennial (9% AA, 30 min.)
.5 oz. Willamette (3% AA, 30 min.)
.5 oz. Willamette (3% AA, 15 min.)
.5 oz. Willamette (aroma)
Yeast: White Labs California.
Carbonation: Forced CO2
