Alcohol: 5.5% v/v (4.3% w/w)
Water: All water is filtered by charcoal and adjusted to 5.0 ph with Lactic Acid
Grain: 8 lb. 8 oz. Pilsner
1 lb. 4 oz. Wheat
Mash: 90% efficiency
Strike 2.75 Gallons 136 degrees
Mash in 124 degrees for 30 minutes
Raise mash temp to 150-54 degrees for 75 min
Boil: 70 minutes SG 1.038 7.5 gallons
Add Irish Moss 15 minutes before knockout
Hops: 1 oz. Tett (3.9% AA, 45 min.)
1 oz. Tett (3.9% AA, 30 min.)
.5 oz. Spalt (aroma)
Yeast: Wyeast Kolsch (2565?) pitched from previous fermentation, second generation.
Log: Brew date 9-27-98, ferment at 68 degrees for 3 days, rack to secondary for 5 days
then to keg with 40 psi CO2 24 hours, then lager 4 weeks.
