Lemongrass Wheat

Tried to copy a beer tried at world beer festival by Outer Banks Brewing Co. Lemongrass is a little expensive but the end result is well worth it.

Beer: Lemongrass Wheat Style: American Wheat
Type: Extract w/grain Size: 5 gallons
Color:
5 HCU (~5 SRM)
Bitterness: 16 IBU
OG: 1.054 FG: 1.010
Alcohol: 5.7% v/v (4.4% w/w)
Water: Raleigh city water for boil...2.5 gallons spring water added to fermenter
Grain: 8 oz. Wheat malt
8 oz. Dextrine malt (Cara-Pils)
1 lb. Flaked wheat
8 oz. Honey malt
Steep: Steep grains @ 150° for 30 mins
Boil: 60 minutes SG 1.090 3 gallons
6 lb. 6 oz. Wheat extract
Add 10 grams of lemongrass for final 20 mins
.5 oz sweet orange peel 20 mins
.5 oz bitter orange peel 20 mins
Hops: 1 oz. Saaz (3.75% AA, 60 min.)
1 oz. Saaz (3.75% AA, 30 min.)
.5 oz. Tettnanger (aroma)
Yeast: 3068 Weihenstephan wheat
Log: Primary: 8 days
Secondary: 21 days
Add 5 grams of lemongrass to secondary for aroma
Carbonation: I keg so force carbonated @ 25lbs pressure at around 45 degrees
Tasting: Strong lemongrass aroma and after taste. Smooth going down and an orgy for the nostrils. Definetly a repeat...enjoy
