Dough in @ 162degF to rest at 153degF for one hour. Test for sacrification & begin sparging @ 168 degF. Drain lauter tun & stur mash, recirulate & sparge again. | ||||||||

All spices added to last 10 min of boil. 1 tsp Corriander 1 tsp Cardamom 1 tsp Powdered Nutmeg 1/4 tsp Ground cloves 1-3" Cinnamon stick 1 oz Dried Sweet Orange Peel 2 tsp Irish Moss Flakes |
