Uncle Dunkel Dark v1.0

This is my first attempt at a Dunlel

Type: All grain Size: 12 gallons
Color:
20 HCU (~12 SRM)
Bitterness: 19 IBU
OG: 1.060 FG: 1.016
Alcohol: 5.7% v/v (4.4% w/w)
Water: All water is RO
Grain: 20 lb. Belgian pale
8.5 lb. German Munich
1.5 lb. Belgian CaraMunich
Mash: 65% efficiency
Mash in at 165°F & rest at 153°-155°F for 1 hour or until conversion.
Boil: 90 minutes SG 1.055 13 gallons
1 Tablespoon Irish Moss last 15 min. of boil.
Hops: 2 oz. Tettnanger (4.5% AA, 60 min.)
2 oz. Hallertauer (3.0% AA, 30 min.)
Yeast: 1 gal. starter White Labs WLP 830 German Lager Yeast
Log: Primary @ 50-55°F until below 1.020, then lauger @ 35°F until gone.
Carbonation: 2.5 volumes Keg: 20.3 psi @ 55°F
