High & Dry Red

A nice hoppy Red Ale

Type: All grain Size: 10 gallons
Color:
29 HCU (~15 SRM)
Bitterness: 64 IBU
OG: 1.066 FG: 1.016
Alcohol: 6.5% v/v (5.1% w/w)
Water: I have VERY soft water, so I add 1tsp breweing salts plus 2 tsp gypsum
to both the mash and sparge water
The water was actually from a melted down ice burg, lots of them around
alaska
Grain: 10 lb. British pale
9 lb. British mild
1 lb. German Munich
2 lb. Belgian aromatic
1 lb. 8 oz. American crystal 40L
1 lb. Dextrine malt (Cara-Pils)
8 oz. Belgian Special B
Mash: 72% efficiency
mash in at 140 for 10 mins then raze to 153-156 for 60-90 mins
sparge with 180 degree water
Boil: 75 minutes SG 1.051 13 gallons
Irish moss and Wyeast yeast nutrient add last 15 mins.
Hops: 1 oz. eroica (13.9% AA, 60 min.)
1 oz. northern brewer (6.7% AA, 45 min.)
1 oz. eroica (13.9% AA, 30 min.)
2 oz. perle (6.7% AA, 15 min.)
2 oz. cascade (aroma)
Yeast: Wyeast 1028 london for 5gals
1084 Irish for 5gals
Log: ferment at ale temp 10 days transfer to secondary 10 days with dry hops
for 5 days try 3/4 oz armarillo pellets or cascade both very nice
bottle with 3/4 cup dry light malt DRINK
Tasting: yum!!!!!
