Mash: | 70% efficiency | |||||||
Mash in and held at 124° for 20 minutes. Raise to 150° and hold for 60 minutes. Mash out at 168° for 10 minutes. Sparge with 170° water treated with 1 tsp. gypsum to get 6.5 gallons. | ||||||||
Boil: | 90 minutes | SG 1.051 | 6.5 gallons | |||||
Added 1 tsp Irish moss last 10 minutes boil | ||||||||
Hops: | 1 oz. Centennial (10.5% AA, 60 min.) 1 oz. Northern Brewer (8.5% AA, 30 min.) 1 oz. Liberty (4% AA, 5 min.) 1 oz. Kent Goldings (aroma) |

Yeast: | London Ale #1028. One pint starter. | |||||||
Log: | Boiled 2 oz. oak chips for 10 minutes and added all the chips and half the water to secondary. Held in 2ndary for 2 weeks. | |||||||
Carbonation: | Primed with 1/2 cup corn sugar and bottled. Held in bottles for 3 weeks before tasting. | |||||||
Tasting: | Hoppy and strong. Nice taste of oak adds to experience. After being transported in oak barrels this is what it must have tasted like. Brewed 5 times. It's still a big hit with my beer drinking friends. |
