Bitterness: 30 IBU
OG: 1.080 FG: 1.030
Alcohol: 6.5% v/v (5.1% w/w)
Water: 1 tsp gypsum in boil water and 1 tsp in sparge water.
Grain: 10 lb. British pale
1 lb. 6 oz. American victory
1 lb. American crystal 60L
1 lb. Dextrine malt (Cara-Pils)
4 oz. Belgian Special B
.5 oz. Roasted barley
1 lb. Belgian CaraMunich
Mash: 75% efficiency
Mash in at 135° for 30 mins.
Raise temp to 155° for 60 mins.
Boil: 120 minutes SG 1.057 7 gallons
Collect 2 qts. of first runnings of mash and boil on stove down to one qt. to caramelize. Add back to boil. Boil for 2 hours.
Hops: 1.75 oz. Willamette (5.1% AA, 45 min.)
0.50 oz. Fuggles (4.2% AA, 15 min.)
Yeast: English Ale WLP002, Stepped up
