This recipe is a slight alteration to Graham Wheelers IPA from the exellent CAMRA book "Home Brewing".This book is a must. The recipe change is due to my personal love of Goldings hops and a descent maturation period to round the flavour of the hop.

Type: All grain Size: 23 liters
Color:
10 HCU (~7 SRM)
Bitterness: 58 IBU
OG: 1.046 FG: 1.010
Alcohol: 4.7% v/v (3.7% w/w)
Water: Pre-filtered water is then Burtonised the day before . Citric acid used to atcheve 5.3pH
Grain: 4kg British pale
250g British crystal 70-80L
Mash: 65% efficiency
Mix grains into 10 liters of water @ 75deg C.Adjust temp to 65deg mash for 90 min
Boil: 90 minutes SG 1.041 26 liters
500g Cane sugar
Irish moss 1tsp .15 mins before boil end. Dry hoped 2 cones of Goldings.
Hops: 90g Kent Goldings (5% AA, 90 min.)
20g Kent Goldings (5% AA, 15 min.)
Yeast: 2 x muntons english ale dry yeast as per instructions. Pitched @ 20deg C
Log: Fermented @ 18 deg C for 9 days. Dropped after 4 days. Primed with 50 grams of honey in 400 ml sollution.Racked and matured for 3 months before tapping. rolled barrel twice a week.Immediately brewed more.
Carbonation: 1.8 volumes Keg: 13.4 psi @ 16°C
vent 2 days after priming. no co2 req'd.
Tasting: Burtonising, the correct starting pH ,and the long wait certainly told with this brew. Whether or not one can tap earlier i dont know, but for this taste, its not worth risking.Next time i may replace some cane sugar with honey.
