Josephsons Honeydew

My enterpretation of a hybrid beer of the sort that is becoming
ever more popular in Britain.

Beer: Josephsons Honeydew Style: American Wheat
Type: All grain Size: 22 liters
Color:
11 HCU (~8 SRM)
Bitterness: 43 IBU
OG: 1.054 FG: 1.007
Alcohol: 6.0% v/v (4.7% w/w)
Water: Pre-filtered ,then Burtonised. Our water is Chlorinated.
Grain: 2.75kg British pale
1.25kg Wheat malt
250g British crystal 70-80L
Mash: 75% efficiency
Mash 10 litres liquor @ 65 deg C for 90 mins
Boil: 90 minutes SG 1.047 25 liters
500g Honey
1 tsp Irish moss.15 mins before boil end.
Hops: 50g Hallertauer (4.25% AA, 60 min.)
30g Kent Goldings (5% AA, 60 min.)
10g Hallertauer (4.25% AA, 15 min.)
5g Kent Goldings (5% AA, 15 min.)
Yeast: 2 X Muntons dry english ale yeast.As per instructions.
Log: Not Brewed. Just thought i'd offer it up to see if it appealed to anyone.
Carbonation: 2.3 volumes Keg: 20.6 psi @ 16°C
Make up 50 gram honey in 1 cup hot water. mix with 2 pints of beer.
Add to keg. vent keg after 2 days.
Tasting: Aiming for a full flavoured ale. With a wheat beer dryness.
