Bee-Sting Ale

We aimed to make a light, refreshing beer for the summer with a hint of ginger.
Similar to one I brewed a few years ago which turned out to be excellent!

Beer: Bee-Sting Ale Style: American Pale Ale
Type: Extract Size: 5 Imp. gal.
Color:
4 HCU (~4 SRM)
Bitterness: 19 IBU
OG: 1.042 FG: 1.008
Alcohol: 4.4% v/v (3.5% w/w)
Water: 1 gallon of bottled water, topped up with tap water from Wiltshire, England
Boil: 60 minutes SG 1.140 1.5 Imp. gal.
4 lb. Light malt extract
1 lb. 2 oz. Corn sugar
1 lb. 8 oz. Honey
2 1/4 oz of grated ginger root added 20 mins prior to end of boil.
Forgot the Irish Moss but turned out clear enough.
Hops: 2 oz. Cascade (6% AA, 60 min.)
.5 oz. Cascade (6% AA, 15 min.)
.5 oz. Styrian Goldings (5% AA, 15 min.)
.5 oz. Styrian Goldings (aroma)
Yeast: Brupaks Ale Yeast pitched at 25°C/76°F
Log: Primary fermentation: 9 days
Secondary fermentation: 6 days
Bottled yesterday - will update once we crack open the first bottle!
Carbonation: Primed with 3 oz of corn sugar boiled in 20 oz of water.
Tasting: Waited a week and a half until we tried it. Suffers from chill haze but has a lovely hop aroma with a subtle hint of ginger. Has a rather light body and the ginger is much more noticeable upon tasting. Next time we will definitely remember the Irish Moss!
