Lil' Urchin I.P.A.

This was my first attempt at a bottle hopped IPA, & I must say I was VERY pleased with the results (as were all my friends & comrades in homebreing). Just FYI, I added whole leaf hops into the bottle using sterilized tweezers & used about 1 oz. for 50 bottles, about 2, 3, or 4 hop buds per bottle. ENJOY!!!

Beer: Lil' Urchin I.P.A. Style: India Pale Ale
Type: Extract w/grain Size: 5 gallons
Color:
16 HCU (~10 SRM)
Bitterness: 53 IBU
OG: 1.069 FG: 1.010
Alcohol: 7.7% v/v (6.0% w/w)
Water: I just used Brita filtered water for everything from the boil to the priming mixture.
Grain: 0.5 lb. British crystal 50-60L
0.5 lb. British Munich
Steep: I steeped the grains in 1 Gal. of water for 30 min. @ 160° in muslin bags, swishing and poking them for pretty much the whole time.
Boil: 60 minutes SG 1.116 3 gallons
9 lb. Light malt extract
I added Irish Moss 15 minutes into the boil (45 min. boiling time).
Hops: 2 oz. Chinook (14.3% AA, 60 min.)
1 oz. Kent Goldings (5.5% AA, 10 min.)
1 oz. Kent Goldings (5.5% AA, !!!DRY min.)
1 oz. Fuggles (5.7% AA, !!!BOTTLE min.)
Yeast: Used Wyeast 1098: British Ale Yeast. It was a smack pack & just 'cuz I got a forum here, I don't see why the smack-packs get such a bad rep. I've never had problems with these & have such awesome & violent initial fermentations that I don't even consider using a regular airlock on the primary, it's all about the blow-off hose now. Just smack the crud out of it & shake it up when I begin & it's real good to go 3-4 hours later when it's time to pitch. There, I'm done.
Log: Actual O.G.--1.058, 78° (8/2/2005)
Grav. @ Transfer--1.012, 72° (8/9/2005) added 1 oz. K.G. in muslin bag for dry hopping
Actual F.G.--1.010, 70° (8/23/2005) added 1 oz. Fuggles into bottles.
Carbonation: 2.3 volumes Corn Sugar: 4.00 oz. for 5 gallons @ 70°F
THIS BEER WILL BLOW!!! I'm not sure if I used too much sugar or if it's all the hops that end up crammed in the neck of the bottles, but every one of my bottle thus far have foamed over. So open yours over a sink 'cuz it's still worth the mess.
Tasting: First tasting (8/28/2005): GREAT!!! Very floral & organic tasting, not overly bitter. Smooth, with a bit of a bite back. Not very sweet either, but not too dry, & you can really taste/ feel the alcohol (upwards of 7%!!!) Seriously, one of the best I.P.A.'s I've ever had. Pour the beer out thru a sceen strainer to collect the hops leaves.
