Shaken Naked Dark Red Ale Quest (1998Q4)
I like amber to dark English/Irish Ales that aren't too sweet as is a
porter. You can drink a lot of this beer and not pay for it. I did my
best quess at the technical specs. I divide the ingredients into 2
worts. I put 15 gallons cold water in my 35 gallon polyethylene tank and
add the 15 minute boil worts as they finish then fill to volume. I do
a yeast starter. Simplicity works best for me. I can be done brewing in
3 hours. 4 hours to clean keg and bottle. I only Brew 4 times a year.

Water: | My water comes from the Clinch/Tennessee River. The intake/treatment plant is only 1 mile away. Fairly hard water. Fairly near about 6 nuclear reactors in Oak Ridge. |

Steep: | Put grains in bag and place in cool water. Over about 15 minutes raise the temp but don't boil. Remove heat and add rest of ingredients. Lightly crack the grains. |

Lactose and the roasted malt extract give more body. The peat smoked grain is great if your having a little scotch. I use John Bull extracts. |

Hops: | 4 oz. Nugget (12% AA, 15 min.) 4 oz. Willamette (5% AA, 15 min.) |

Yeast: | Four packs of ale yeast. Put them in a not so empty can of malt extract with a little sugar and warm water. In 15 minutes you shoul see little bubbles. When the fermenter is pleasent to the touch add the yeast. Stir the yeast starter up. |

Log: | Fermentation is at room temp (72). Fermentation usually stops after 2 days. One can add another batch of yeast at this point to force the alcohol up. Day 5 to 7 I bottle about 30 2L Coke Bottles, 24 0.5L Grolosh bottles, and two 5 gallon kegs. Hops. Just toss the pellets in the start of the wort boil and forget it. |

Carbonation: | Bottling use 0.5TBS corn sugar per 0.5L (2 TBS/2L Coke bottle). Save time and buy a 1/8 cup measure, it's the same. Kegging use reconditioned Pepsi/Coke kegs, chill to temp, add CO2 till you get a stable level (7psi for this one). |

Tasting: | No ugly after taste. Dark yet refreshing. Serve cold or about 45F. Nice head. Very simple. I like the lower alcohol and high calorie to keep my weight up and I can drink a lot. Wort chillers, bottled water, hop bags, 60 minute boils, mashing, secondary fermentations, and filters are for poeple who are very serious. Beginners don't get caught up. |
