Alcohol: 6.1% v/v (4.8% w/w)
Water: Filtered Tap Water
Grain: 4 oz. American crystal 120L
4 oz. Belgian CaraVienne
2 oz. Carafa II Dehusked Chocolate
2 oz. Roasted barley
Steep: Heat water to 168F. Place grains in Muslin bag and steep for 30 minutes. Rinse with 2 cups of boiling water.
Boil: 30 minutes SG 1.061 2.5 gallons
3.3 lb. Light malt extract
0.5 lb. Honey
Add half a teaspon of Irish Moss with 15 minutes left in the boil.
Hops: 0.75 oz. Fuggles (4.75% AA, 30 min.)
0.5 oz. Kent Goldings (5% AA, 30 min.)
0.25 oz. Fuggles (4.75% AA, 2 min.)
0.5 oz. Kent Goldings (5% AA, 2 min.)
Yeast: Nottingham dry yeast pitched according to directions.
