Alcohol: 6.1% v/v (4.8% w/w)
Water: Add a teaspoon of gypsum if you like.
Grain: 1.75 lb. American Crystal 60L
0.125 lb. American Chocolate
Steep: Steep grains for 45 minutes @ 155° - 160° F.
Boil: 60 minutes SG 1.058 5 gallons
6 lb. Light LME
1 lb. Light DME
Add 1 teaspoon of flaked Irish Moss the last 15 minutes of the boil.
Hops: 1 oz. Cascade (6% AA, 60 min.)
1 oz. Hallertauer (4.25% AA, 60 min.)
1 oz. Cascade (6% AA, 15 min.)
1 oz. Hallertauer (4.25% AA, 15 min.)
Yeast: Wyeast #1028 (London Ale) or White Labs WLP013 (London Ale)
Carbonation: Bottle using corn sugar or force carbonate in a keg.
