Nice big beer with lots of maltiness followed by nice long bitter finish. 1.085 O.G. and 85 IBUs double IPA.

7.9 oz. American crystal 20L
7.9 oz. Flaked rye
Steep: Steep 2 lbs of grains at 151° for 40 minutes in 3 qts of water.
Boil: 60 minutes SG 1.085 5 gallons
0.99 lb. Light dry malt extract
9.49 lb. Light malt extract
Isn't 2 lbs grain, 11 lbs of extract and 7+ oz. of hops enough??
Hops: 1 oz. Chinook (11.9% AA, 60 min.)
1 oz. Cascade (5.7% AA, 45 min.)
1 oz. Willamette (5% AA, 45 min.)
1 oz. Cluster (7% AA, 30 min.)
.33 oz. Saaz (3.75% AA, 30 min.)
1 oz. Kent Goldings (5.5% AA, 15 min.)
1 oz. Cascade (aroma)
1 oz. Saaz (aroma)
Yeast: Used WL005 English Ale Yeast. LHBS did not have WL001 California Ale Yeast planning to use, so ended up with higher final gravity than originally intended (1.016). Still, the higher body works well with me.
Log: Primary for 11 days at 64-69°, secondary for 12 days at similar temp. Dry hopped 1 oz. Cascade & 1 oz. Saaz in secondary.
Carbonation: 3/4 cup priming sugar and bottled
Tasting: With high FG, has a dextriny big mouthfeel more in line with barleywine but the hops to kick it into definite IPA style. After 2 weeks, it was very alcohol-hot and then a knockout punch to the face of hops - pretty rough. After 2 months, it had mellowed to a nice round sweet malt start to lingering bitter slide at the end - still full bodied. Hitting full stride at 4 months. Putting some of this in the back of the fridge (and trying to forget) and planning try in 12 months!
Had a Stoudt's I2PA and other than being more full bodied than the Stoudt's, this homebrew was right on the flavor profile. Would use a better attenuating yeast next time, though like the fruity esters in the English variety - maybe a WL007 would be good.
