My Honey Berry

Beer: My Honey Berry Style: Barley Wine
Type: All grain Size: 5.5 gallons
Color:
11 HCU (~8 SRM)
Bitterness: 0 IBU
OG: 1.133 FG: 1.005
Alcohol: 16.5% v/v (12.9% w/w)
Water: Filtered Water (home filter)
Grain: 2 lb. Wheat malt
1 lb. American victory
Mash: 80% efficiency
2 pans
1st pan - 6 lbs black berries (frozen) with enough water to barely cover Heat to approximately 130° and keep there for 15 minutes mash berries using a potatoe masher, add 1 tsp Pectic Enzyme , continue on heat an additional 40 minutes. remove from heat, add 1 squeeze bottle lemon juice, and 1 tbsp nutmeg.

2nd pan - add cracked grain, follow normal proceedures for grain for 1/2 hr, remove grain, add Brown Sugar leave temp at approximately 155° for 15 min, reduce heat to approximately 120° add honey, add 1 tsp Irish Moss, increase heat for 20 minutes back to 155°, remove from heat, cool rapid.
Boil: minutes SG 1.730 1 gallons
2 lb. Brown sugar
10 lb. Honey
6 lb. Black Berry (Frozen)

After adding contents of both pans to the Primary Fermenter, add 2 oz light oak chips to the primary fermenter.
Hops: .5 oz. Mt. Hood (aroma)
Yeast: 1 package Ale Yeast, 1 pkg champagne yeast.
Log: After about 1 week (at least 1 min between bubbles in the airlock) rack to 2nd fermenter, do NOT add any further wood chips. After 2nd fermenter for 1 week, run thru filter, and place in 3rd Fermenter (about 3 - 4 days) should not see any further bubbling.

since this is my 1st batch of this, I may be adjusting numbers after all is said and done. for the next batch. However it SMELLS GREAT in the primary fermenter.
Carbonation: I will split the batch into 2 seperate batches.

1st batch bottled without any carbonation added.

2nd batch bottled using 1 coopers carb drop per 16 oz bottle to add carbonation.

I will let you know which is better.
Tasting: Tasting it from the Primary Fermenter, it was tempting to filter and start drinking (after about 3 days) still had a nice honey taste, however the berries are evident. I may end up diluting it abit, as it is appearing more like blood, than beer. but we'll see after I place in the 2nd fermenter.
