Imperial Stout

This beer tastes better after 4 months of aging. I don't like espacially
bitter beers. This one has mellowed with age. Has received good reviews
from homebrew club memebers. May enter this in AHA '99 competetion.

161 HCU (~49 SRM)
Bitterness: 76 IBU
OG: 1.097 FG: 1.028
Alcohol: 8.9% v/v (7.0% w/w)
Water: None
Grain: .5 lb. Belgian CaraVienne
.5 lb. Belgian Special B
.5 lb. British chocolate
.75 lb. Roasted barley
Boil: 75 minutes SG 1.084 5.8 gallons
12 lb. Light malt extract
Hops: 2 oz. Galena (13% AA, 90 min.)
.5 oz. Perle (8% AA, 15 min.)
.5 oz. Willamette (aroma)
Yeast: Doubled starter (32 oz). Pitched at 80 degrees. Fermented at 65-70 degrees.
Log: 120 degrees for 30 minutes, 150 degrees for 45 minutes, boil 1 hour 15 minutes.
