Scarborough Faire Ale
I'd heard about Gruit Ales made with no hops. I was thinking of how to make one when the song "Scarborough Faire" came on, so I decided to do that.

One ounce each of Parsley, Sage, Rosemary, and Thyme. | ||||||||

Yeast: | SafAle S-04 Dry English Ale Yeast | |||||||
Log: | I boiled the extract with water for 30 minutes before adding the herbs. I guess I didn't have to, but it turned out good. | |||||||
Carbonation: | 2.8 volumes | Corn Sugar: 5.13 oz. for 5 gallons @ 66°F | ||||||
Tasting: | The Parsley & Thyme really add nothing to the taste that I can tell. At bottling time the sage was just about overpowering, but it has mellowed very nicely over time. After about 3 weeks the rosemary is showing through as well. Just a really good, flavorful ale. |
