Opti-celebrinator

This was my first foray into lagers. I don't have a temp. control yet for my fridge, so the fermentation temps have been inconsistent. I was able to maintain 48-54 for most of the time, but had some 40 degree readings.

Type: Partial mash Size: 5 gallons
Color:
74 HCU (~29 SRM)
Bitterness: 21 IBU
OG: 1.087 FG: 1.020
Alcohol: 8.7% v/v (6.8% w/w)
Water: New seasons filtered water.
Grain: 5 lb. German Pilsner
2.5 lb. German Munich
1 lb. Dextrine malt (Cara-Pils)
1 lb. American chocolate light 170L
2.0 lb. American crystal 60L
1.5 lb. British Carastan light 20L
Mash: 65% efficiency
Single infusion (German NO NO! :) ) at 152° F. 60 minutes. Sparge with 170° to reach 6.2 gallons.
Boil: 90 minutes SG 1.071 6.2 gallons
3 lb. Light dry pilsner malt extract
Irish moss at 20 minutes. A DME to hot water and add to pre boil pot. I did not have room in the mash tun for all the grain needed for a full all grain brew-hence the DME.
Hops: .75 oz. Perle (7.3% AA, 90 min.)
.5 oz. Hallertauer (3.7% AA, 30 min.)
.5 oz. Hallertauer (aroma)
Yeast: Wyeast 2206 (Bavarian lager)
used 2 smack packs-no time to do starter.
Log: 10/12/07-Brewed OG 1.087
10/26/07 Racked to secondary SG 1.030
11/26/07- Should be ready to bottle.
Carbonation: 2/3 cup corn sugar for priming
Tasting: So far, it tastes good, still needs to finish fermenting-still sweet. Nice flavors-a bit more chocolatey than most dopplebocks. I used a dopplebcok recipe from BYO.
